A quick plea

following Bumblevees recent comment 'Okay, that does it...I must find some tres simple recipes for you guys...' I am now on the lookout for easy peasie recipes to keep us going.......Anyone got any?

by the way, my Mums casserole was delicious!!

I'm wracking my brain...but most of them are still a bit tricky with only one working hand... and it being the left is still a bummer for opening cans! most can openers are meant for "righties"

However, if Ian or Ted can open a tin of mushroom soup before heading out of a morning...and perhaps just cut up a small onion... this will be quick for one evening. You could have it with toast in a pinch... or rice would probably be easy enough to make .. an all in quick and easy meal.

Use either some pork chops or some chicken...

Brown chops in a large non stick pan or add a bit of olive oil..sprinkle with a few spices of your choice. (I like Herbes de Provence) Turn and brown other side.
Throw in chopped onion near end of browning so they don't get overcooked. Add a bit of celery if Ian cut some of that as well..hahahha (( I don't think you should try it left handed !!))

Pour soup in bowl and stir as well as you can before adding half a can or so of water to it so it gets nicely combined and not "bitty". Pour over the chops...
Add some frozen peas or green beans...give a gentle stir so all is combined and put on lid. Reduce heat to low and gently simmer for about 20 mins or so.

It's not fancy, but it's pretty yummy....but, Ian will probably have to cut your meat for you too... awww...poor you. I absolutely do know how you feel...I had carpal tunnel surgery a couple years ago on my right hand... and I was in the same damn boat. However, I did know in advance and man...did I have lots of frozen lunches and stuff in the freezer to use...

Hi Sue, glad the casserole was good. I'm a great one for making 'everything in one pan' meals. Risotto style is good. Fry off onion and thinly sliced veg of choice, add strips of chicken or similar and fry till opaque and lightly browned add rice (half a mugful). Fry for couple of minutes add boiling water and seasoning- stock cube, soy sauce, tomato puree - fast simmer till rice is cooked, add more boiling water if it gets too dry. My water measure is usually guesswork!

I do a similar thing in a large pan, fry onion and meat, chuck in chopped veg, add chopped potato if you wish,season, cover in boiling water and bring to boil, simmer on low for as long as you like, usually at least hour and a half. You could serve with pasta if you don't fancy spuds.

Otherwise Sainsburys do a good line in ready meals!

Really easy and tasty: Tortilla pizzas.
They work best if baked on a pizza stone, but a cookie sheet works too. Put stone in oven and preheat to 400 degrees F. take a regular tortilla (I use whole wheat, but regular flour works, too.) Top with favorite pizza toppings (no sauce! too wet) We use tomatoes (romas are less likely to make your tortilla soggy), capers, sun dried tomatoes, veggies, italian herbs, and cheese. You can also use pepperoni, ham, garlic, chicken, etc. Be creative! Once you have the toppings you want, put your pizza in the oven on your pizza stone or cookie sheet. Bake for 5 to 8 minutes, depending on how thick your toppings are. Remove from oven. Cut into four triangles. Enjoy!
